The Montreal bagel was introduced by Jewish immigrants from Poland in the early 20th century. The dough is boiled in honey water then baked in a wood-fired oven. It is thinner, chewier, sweeter and smaller than the New York-style bagel. The bagels pictured here are sesame seed bagels from Fairmount Bagel shop, rumored to be the original Montreal bagel bakery.
