January 06, 2007. Customers are flocking to the Beard Papa franchise  in Hollywood to taste their cream puffs. For decades the U.S. has dominated the global food franchise business, with companies like McDonalds and KFC. Now, America s immigrant population, and a more food–savvy U.S. population, is attracting a new breed of franchises based on foreign food concepts. One popular newcomer is Beard Papa, a Japanese cream puff creation that has folks lined up for hours in their first months of operation. Lung and Lee opened the first Beard Papa franchise at the Hollywood and Highland location a little more than a year ago and they now have six in Southern California.
